Duties and responsibilities for University of the Free State:

• Ensure a high standard of food preparation in the dining halls for clients.
• Provide assistance as required by the business.
• Cooking equipment, such as stoves, cookers, ovens, and fryers, should be operated with the assistance of an operator.
• The storage and use of food supplies must be done in a resourceful manner.
• Food items should be rotated properly in refrigerators and any near-expiring ones should be dealt with accordingly.
• By providing input and managing work, assist chefs in their cooking activities.
• Follow the orders of the chefs when setting up food stations.
• In the preparation and cooking of food, ensure that recipes are followed properly.
• Establish and maintain standards for portion control and presentation.

• Ensure that the kitchen is always clean and organized.
• Keep kitchen hygiene protocols in line with best practices.
• Keep high culinary standards in mind when guiding kitchen staff.
• Food leftovers should be properly stored.
• Ensure both the quantity and quality of food deliveries are met.
• Make sure food inventory is kept under control by contributing to stock rotation activities.

Inherent Job Requirements:

• It is equivalent to a National Vocational Certificate at level 4 on the NQF in food preparation and cooking.
• Chef experience of at least one (1) year in the hospitality industry (including experience as a chef).

Recommendations:

• HACCP standards should be well-understood.
• It is highly recommended that you have some experience in occupational health and safety.
